How do I make my sections look deep and readable (not flat)?

Three moves. First, pull the section box depth in so distant geometry stops polluting the view — include only what the drawing needs. Second, Graphic Display Options → Depth Cueing: dark foreground fading to light background gives instant spatial depth. Third, poché: set the Cut Pattern of your materials to Solid Fill black so cut elements read as solid. A thick ground line (a heavy floor or a filled region) anchors the whole drawing.
